Safer Tourism Foundation
Launch of allergy awareness campaign
This month, the Safer Tourism Foundation launches a new campaign – Put the Nuts Away. The campaign aims to make travel safer for food allergic travellers. According to Safer Tourism’s research, one in seven travellers have experienced a food related allergic reaction on holiday (themselves or a travel companion), an increase of 25% in the past six months. Safer Tourism Foundation’s incident data also shows that near misses relating to life-threatening food allergies are a critical area of concern for the industry.

New Culinary Adventure in Buenos Aires
Matt and Silvina from ATP tried a new culinary adventure in Buenos Aires which we believe is a fantastic option for our clients. This closed-door restaurant accommodates only 10 guests. Begin with an aperitif on a charming terrace filled with greenery. Then move to a shared table in the adjacent dining room to enjoy a seven-course menu paired with five exceptional wines from boutique wineries across various regions. Each dish is crafted with organic ingredients and meticulous detail, and as the dishes are presented, the pairing is explained. One of the highlights is the unique (and very unusual) wine varieties offered, along with a casual blind tasting where guests attempt to identify each type. Overall, it’s a well-executed, balanced, and relaxed experience.

No.29 Boragó, Santiago: the dishes created by chef Rodolfo Guzmán are not only visually striking and incredibly tasty, but also crafted with sustainability at the core. Having a zero-mile cooking philosophy, maintaining local ecosystems and responsible sourcing are some of the measurements implemented at Boragó. CHILEAN MERKÉN VOTED THE WORLD’S BEST SPICE
Chile’s culinary heritage mirrors its cultural diversity, and merkén stands as a testament to this richness. This traditional Mapuche spice, made from smoked “Cacho de Cabra” chillies, roasted coriander seeds, and sea salt, embodies the flavours of the Araucanía region. Its smoky, earthy undertones and spiciness have earned global acclaim, with Taste Atlas naming it the world’s best spice in December 2024. More than a seasoning, merkén is a symbol of Chile’s traditions and history, connecting modern cuisine to ancestral roots. Harvested in February at peak ripeness, the chillies’ vibrant red hue highlights their quality.
For those seeking a deeper connection, guided tours explore the origins of merkén and offer insights into Mapuche culture.
